  1. To prepare the chicken, mix the lemon juice, chicken, white wine vinegar, turmeric powder, half of the grated garlic and ginger together with other dry spices.
  2. leave to marinate in the fridge for at least 2-3 hours, or preferably overnight.
  3. For gravy, heat the oil in a large pan or wok over medium-high heat
  4. Add chopped onion, rest of the ginger garlic and saute till it is golden brown. It will take around 8-10 minutes on medium-high heat.

  7. Add a little warm water to bring the masala together.
  8. Cover and cook for 15-20 mins until the chicken is cooked through.

 Murgh do Pyaza takes the inspiration from Persian & Mughal cuisines. It is a quick & flavorful recipe cooked over high heat. The use of a good amount of onion gives this dish sweetness & a thick flavorful gravy.

  • Garam Masala Powder – 1 tbsp
  • Green Chillies – 2 to 4
  • Tomato – 1 large diced
  • Coriander leaves finely chopped

Quick recipe⇓

  1. To marinate the chicken put it in a bowl, add all ingredients given, and mix well. Set aside for at least 2-3 hours.
  2. Add thick curd or yogurt in a bowl, add turmeric powder, chili powder, coriander powder and mix well.
  3. Heat oil in a pan or wok. Add a bay leaf, finely chopped onions and cook till golden brown.
  4. Add ginger-garlic paste and saute for 3-4 minutes.
  5. Add the tomato puree and cook till oil separates.
  6. Once the masala is cooked, add yogurt mix and cook again till oil separates.
  7. Add in chicken and stir well so that masala coats the chicken pieces.
  8. Add salt to taste & warm water to help masala come together. Add the diced onions. cover and cook till chicken is thoroughly cooked.
  9. You may add the diced tomatoes and chilies.
  10. Turn off the heat and add coriander leaves & garam masala.
  11. Serve hot with naan or rice.

9. Chicken Chettinad

Chettinad Chicken is one of the best Indian chicken recipes coming from the Chettinad region of India. The freshness of curry leaves, the richness of coconut with choicest of spices makes it one of the most celebrated south Indian chicken dishes.

Chettinad food is a cuisine of the community called Nagarathars or Nattukotai Chettiars from the Chettinad region of Tamil Nadu. They use a variety of dry spices, meat & vegetables specific to the Chettinad region.

Unlike the common perception, Chicken Chettinad is NOT a spicy dish. In fact, it is pretty mellow yet packed with flavors. Chettinad cuisine is packed with dry spices like cloves, aniseed, coriander seeds, fenugreek seeds, pepper & tamarind.

  •  1 tbsp coriander seeds
  • 1 tbsp cumin seeds

  • 1 tbsp poppy seeds
  • 1 tbsp Kashmiri chili powder
  • 1 tsp turmeric powder
  • 2 tbsp coconut oil
  •  garlic cloves, finely chopped
  • 1 cinnamon stick
  • 3-4 cloves
  • 1 star anise
  • 5-6 shallots, sliced
  • 2 puréed tomatoes
  • coconut milk
  • salt

Quick recipe⇓

  1.  To make the masala paste add a tablespoon of cooking oil in a pan.
  2.  Add cumin seeds, peppercorns, coriander seeds, fennel seeds, cloves, cardamoms, whole red chilies, cinnamon stick & cook for a few seconds.
  3. Add chopped ginger and garlic. When it turns slightly brown, add poppy seeds and fresh coconut. Fry for about 1-2 minutes on low flame. You may add little water to roast the masala.
  4. Allow the paste to cool and grind it into a fine paste.
  5. In the same pan, add more oil and fry chopped onions. Once the onion is sauteed, add curry leaves, turmeric, red chili powder, and the masala paste.
  6. Add a little water & fry the masala till the oil separates.
  7. To the mix, add chopped tomatoes & cook for another 2-3 minutes
  8. Add chicken to the masala. Give it a nice stir.
  9. You can add 1/4 cup of warm water to get the consistency of gravy
  10. Add salt and allow the chicken to cook completely on low flame.
  11. Once the chicken is cooked through, turn off the gas, add lime juice & serve with freshly chopped coriander leaves & few curry leaves.
  12. Chicken Chettinad is can be served with steamed rice, Tawa rotis, dosa, or neer dosa.

10. Chicken Xacuti

Chicken Xacuti or Goan Chicken Xacuti is a popular dish from the land of sun & surf, Goa. The dish gets its unique flavor & aroma from the freshly roasted spices, ground into a fine powder.

In Goa, the dish is pronounced as ‘Chicken Shakuti‘. The poppy seeds & Kashmiri red chilies used in the dish gives it a rich red color & complex flavor.

  1. Marinate the chicken with salt & turmeric.
  2. Add chopped onions & garlic-ginger paste and saute till it turns fragrant. Add grated coconut & saute further till it turns golden brown. Keep the mixture aside.
  3. Add cinnamon stick, peppercorns, cumin seeds, Kashmiri red chilies, poppy seeds, coriander seeds, cloves, fennel seeds, sesame seeds, fenugreek, turmeric powder and roast them till it turns fragrant. Add a little water & grind it into a fine paste when cools down.
  4. Now some oil in a pan. Add the ground paste and cook till the oil separates. Now add chicken and keep stirring for a few minutes.
  5. Add the tamarind paste in the pan & cook it till the chicken is tender.
  6. Garnish with fresh coriander leaves and serve it with rice.
